Protein Banana Nut & Chocolate Chip Muffins


I buy bananas all the time and they usually go bad because I don't eat them fast enough. I hate throwing away food so I've learned how to use it until I am unable to use it anymore. I either make my banana ice cream with the berry ripened bananas or my protein banana nut and chocolate chip muffins.

  • three or four ripened bananas

  • two scoops of vanilla protein powder of your choice. You can even use chocolate protein powder.

  • Spices needed; cinnamon, nut meg, and ginger (season to your taste)

  • 1/4 cup of dark chocolate chips

  • One cup of Stevia or Splenda

  • One and a half cups of coconut flour

  • A pinch of table salt

  • 4 ounces of coconut oil.

  • 1/2 teaspoon of vanilla extract

  • 5 egg whites

  • One cup of almond milk or coconut milk.

Preheat oven to 325°

After you have mashed the bananas and added all the ingredients, The batter should be nice and thick. Take an ice cream scooper and scoop batter into muffin pan.

Bake for 25 mins. or until golden brown. Serve with coffee, or have as a post workout snack.

Bake for 20 minutes or until golden brown on top.
